Elderberry Flower and Plum Squares

Hozzávalók 24 x 24 cm-es formához:

100 g corn flour
½ pck baking powder
1 tsp vanilla extract
3 tbsp dandelion honey and some other sweetener/sugar
3 eggs
200 ml cream
½ tsp cinnamon
3 larger elderberry flowers
Hard plum jam

Sour cream topping

1 lg sour cream
sweetener
2 pck vanilla sugar
Cinnamon to taste

In large mixing bowl, mix eggs, honey, sweetener, vanilla, cinnamon and cream. Mix with handheld mixer until smooth. Add cleaned elderberry flowers (take it off the stems) In a small bowl, mix corn flour and baking powder, and add to egg mixture. You will get a soft mixture.

Butter a small square baking pan, sprinkle with breadcrumbs. Pour the smoothly mixed mixture into it. Drop small spoonfuls of jam (a harder jam, like plum or apricot will work well for this).

Put into preheated oven, bake it for 25-30 min. (I used the convection setting at 300 F .
Take it out of the oven and let cool in the pan. Meanwhile, prepare topping.

Mix sour cream, sweetener and cinnamon. Spoon over individual squares on the plate as you’re serving them.
